Mark Perez serves as a Sous Chef at J.S. Barnett’s Whiskey House in Waco, Texas, where he brings a steady hand, creative spirit, and over ten years of diverse kitchen experience to the table. Known for his calm leadership and passion for great food, Mark plays a key role in crafting Barnett’s elevated Southern-inspired menu and ensuring each dish reflects the restaurant’s commitment to quality and hospitality.

Mark’s culinary journey has taken him through a variety of kitchens, from the smoky comfort of barbecue to the refined pace of fine dining. His time at The Ritz-Carlton Amelia Island and JW Marriott Starr Pass allowed him to develop a strong foundation in technique, organization, and high-volume service, balancing precision with artistry. At each stop, he learned that great food begins with respect, for ingredients, for the team, and for the guests they serve.

After spending a few years as a stay-at-home parent, Mark returned to professional cooking with a renewed sense of purpose and gratitude for the craft. At Barnett’s, he thrives in a collaborative kitchen environment, working closely with his peers to create dishes that bring people together and celebrate Waco’s vibrant culinary scene.

Mark’s approach to cooking is guided by both creativity and sincerity. He believes that every dish should not only delight the senses but also convey a sense of care and purpose. Whether he’s developing new menu creations, refining techniques, or mentoring the next generation of cooks, Mark brings thoughtfulness and artistry to his craft.
